Bacon, Egg & Avocado Salad

Ingredients

  • 4 slices Fischer's Bacon
  • 8 hard-boiled eggs, chopped
  • 2 avocados, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tbsp. olive oil
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. mayonnaise
  • salt and black pepper
  • spring greens

Directions

  1. Cook the bacon in a large skillet over medium-high heat, turning once, until browned, 6 to 8 minutes; crumble.
  2. Mix together oil, lemon juice, mayonnaise and salt and black pepper to create the dressing.
  3. Assemble salad by topping spring greens with bacon, eggs, avocado and dressing. Top with fresh chives.
