Bacon-Stuffed Mushrooms
Impressive as an appetizer, filling enough to be a main entree!
Ingredients
- 8 strips Fischer's Bacon
- 1 medium onion, diced
- 1 pound whole fresh mushrooms, stems removed
- 1 package (8 oz.) cream cheese, softened
- 1/4 cup grated Parmesan
- 1/4 tsp garlic powder
Directions

Preheat oven to 400 degrees F. Cover rimmed baking sheet with aluminum foil.

In a pan, fry bacon until crisp. Cut into small pieces. Add onion to the pan with the remaining bacon grease and cook over medium heat, stirring often until onions are caramelized. About 8-10 minutes.

Mix cream cheese and garlic powder. Stir in bacon and onion.

Place mushrooms on the baking sheet, upside down. Fill each one with the cream cheese mixture.

Bake until the mushrooms are tender, around 25-35 minutes. Top with Parmesan and put back in the oven to allow the cheese to melt. Remove from oven. Garnish with chopped green onion, chives or parsley, if desired. Serve.
